How to Unsync From iTunes

One way to remove synced items from your iPod, iPhone or iPad involves accessing iTunes and deselecting items you no longer want on your mobile device. Business owners who need to conserve space for important business applications, contacts, music or video disable syncing for specific items or groups of items. By removing unneeded content from your mobile iOS devices, you can save space for important business documents, email downloads and other business-related data.
Connect the iOS device that you want to unsync from iTunes and launch iTunes.
Locate the Devices section and click on the name of the device you want to unsync.
Click on each tab and deselect the "Sync" option for each category and click "Apply." For example, in the Apps tab, deselect "Sync Apps."
Click the Summary tab and deselect the option to sync over Wi-Fi. Click "Apply" to save your changes.
To turn off iCloud syncing, tap the "Settings" app and tap "iCloud" on your iOS device. Turn from "On" to "Off" any of the sliders. If you want to completely remove your iCloud account, tap the "Delete Account" button.
Unsync individual songs and videos by clicking the corresponding item's check box in the iTunes library section. Click on your device in the Devices section, click the "Summary" tab and check "Sync Only Checked Songs and Videos."
Deleting your iCloud account will stop automatic syncing, but it will also remove all of the documents from your iOS device that were stored in iCloud.
